Vegan Gingerbread Men

 

We love experimenting with new things and especially with vegan recipes that contain no animal fat, dairy, and eggs. After weeks and weeks, we discovered the perfect recipe for the most delicious and cute gingerbread biscuits, full of flavour, with a touch of spice and everything nice!

So here we are, sharing all the tips and tricks of the cutest gingerbread men!

 

You will need:

¼ cup Vegan Butter (56g)

½ cup Brown Sugar (100g)

½ cup Molasses (100g)

1 tbsp. chia seeds

3 tbsp. hot water

2 cups All-purpose Flour (250g)

1 tsp. baking Soda

¼ tsp. salt

2 tsp. ginger

2 tsp. cinnamon

¼ tsp. all spice

¼ tsp. cloves

To decorate (optional):

1 cup powder sugar

Vanilla

1 tbsp. soy/almond milk

180 C for 15 min.

 

Firstly you should mix in a cup the chia seeds and the hot water and let them sit for 5 minutes. Then you mix the butter and the sugar in low speed. When it’s fluffy put the molasses and the chia seeds. Mix again until combined and then add all the dry ingredients to the mixer. when the dough forms, roll it out and cut your favorite shapes. We chose the gingerbread men. Line a tin with parchment paper and put the cookies wide apart from each other. Preheat your oven to 180C and bake for 15′.

If you fancy some frosting on top, mix all the frosting ingredients and smear it on top of your cookies. Enjoy!
